3 fast-pasta recipes ready in 15 minutes

There is this myth here in the US that cooking pasta is long, annoying and difficult. These quick-pastas will bust the myth. All these recipes come from the popular italian tradition, they are meant to be done when you fridge is sadly empty and that lonely lemon is staring at you. They are good for every occasion: when you come back late from work, for a quick lunch or to minimize the hangover after an alcoholic night (even science says the pasta is the best hangover cure).
Let’s start.

Ajo,Olio&peperoncino (garlicoilandhotpepper)

Yes, you have to pronunce it all togheter withouth taking a breath.
Procedure (for two):
– Bring a pot of heavily salted water to a boil over medium-high heat, when the water boils put the pasta, spaghetti other long formats.
– In a large pan put a generous amount of good olive oil (extra virgin, of course), add two crushed garlic cloves and chili pepper (quantity to your taste, I suggest one table spoon but depends on the power of it), medium heat.
– drain the pasta very al dente, keep some water from the pot (let’s say a glass).
– sautè the pasta in the pan, turn up the heat and add little by little the water in order to create a cream

Pasta Butter&Anchovies

– Water, boiling and pasta as before
– In a pan put the butter (let’s say at least two table spoons), add four anchovies. Let them mealt into the butter over low heat.
– drain the pasta very al dente, keep some water from the pot (let’s say a glass).
– sautè the pasta in the pan, turn up the heat and add little by little the water in order to create a cream
– serve it immediatly with toasted bread crumbs on top and some lemon zest.

One-pot Pasta with broccoli

– Bring a pot of heavily salted water to a boil over medium-high heat, when the water boils put the pasta, rigatoni or penne.
– after 1 minute put the broccoli in the pot, let them cook togheter with the pasta
– drain the pasta and the broccoli, save some of the water
– put the pot on the fire again with some oil, put the pasta&broccoli into the pot and saute them with the water
– Serve it with parmigiano or pecorino romano
